cPanel Email Account Access?

My server is currently showing alot of emails coming from 2 different accounts and as a result I suspended both the accounts in WHM. Now both clients are saying that they did not send any emails. How can I check if they are lying and to find how these emails were sent?

How can I find out if it really was hacked, and how to stop this from happening again?

They may have been spoofed by a clever spam bot. To know, you're going to have to go into your outgoing mail logs, it won't be fun. Assuming you have strict authentication, if the mail authenticated with the outgoing server I'd assume it was them or they'd been compromised.
