No, not unless you store the data elsewhere while you create the RAID5.

Any suggestions in converting to RAID 5 the fastest way with all data backed up?

Yes it is possible to do to a particular degree, However I havent done it personally. Backup all data need 3 disks and create raid 5

It's possible as lots of NAS devices use mdadm (Linux RAID) and do this, though I've never done it manually on a live system. If you try one of the guides above make sure you backup any data first just incase!
